This Indian-Spiced Caesar salad creates a fusion twist on the classic recipe. Crispy sourdough croutons seasoned with aromatic garam masala and turmeric, paired with Greek yoghurt infused with mint chutney and roasted cumin powder. Fresh romaine lettuce, cheery tomatoes and red onions give an eye-appealing base, while Parmesan cheese and fresh cilantro add the finishing touch. The mint chutney and chaat masala add complexity that replaces the umami from Worcestershire sauce, while the roasted cumin provides earthiness similar to Dijon mustard.

Ingredients

Salad Base: 

  • Romaine Lettuce (chopped) – 1 large head 
  • Cherry tomatoes (halved) – 1 cup (250)
  • Red onion (sliced) – ¼ cup (60g)
  • Parmesan cheese – 2 tbsp
  • Fresh cilantro, chopped – 2 tbsp


Masala Croutons:

  • Sourdough bread, cubed – 1 slice 
  • Olive oil – 1 tbsp
  • Garam masala – ½ tsp
  • Turmeric powder – ¼ tsp
  • Black pepper – To taste

 

Indian-Spiced Yoghurt Dressing:

  • Greek yoghurt – ½ cup (125g)
  • Olive oil – 2 tbsp
  • Mint chutney (blended fresh mint, cilantro, green chillies) –  1 tbsp
  • Garlic cloves – 2 nos. 
  • Lemon juice – 1 tbsp 
  • Roasted cumin powder  – ½ tsp
  • Parmesan cheese (grated) – 2 tbsp
  • Chaat masala – ¼ tsp
  • Black pepper – To taste

Instructions

  • Cut the sourdough bread into small cubes. Toss the bread cubes with olive oil and Indian spices. 
  • Bake it at 375°C for 10-12 minutes until crispy. 
  • Blend all the dressing ingredients until smooth. 
  • Toss lettuce with dressing, top with croutons, add the cherry tomatoes and parmesan and serve. 

Healthy Tips & Facts

  • Use 2-3 days old sourdough bread for best results. 
  • If the sourdough is very sour, reduce the lemon juice in the dressing slightly. 
  • Mint chutney adds brightness and replaces the traditional use of Dijon mustard. 
  • Let the dressing sit for 30 minutes before serving to allow the flavours to combine well. 
  • You can also add grilled chicken pieces or paneer cubes to make it protein-rich.
