The light and refreshing cucumber salad is perfect as a side dish or healthy snack. With crisp cucumbers, fresh herbs, and a zesty lemon dressing, it is low-calorie, hydrating and packed with antioxidants. Perfect for summer meals or a quick, nutritious addition to any dish.

Ingredients

For Salad:

  • Large cucumbers, thinly sliced – 400g
  • Red onion, thinly sliced – 50g
  • Parsley, finely chopped – 2 tbsp
  • Fresh mint – 1 tbsp
  • Salt – To taste 
  • Black pepper – ½ tsp
  • Garlic powder – ½ tsp
  • Sesame seeds – 1 tsp
  • Red pepper flakes – ¼ tsp

 

For Dressing:

  • Paneer – 250 g
  • Curd – 60 g
  • Milk – 60 g
  • Paprika powder – 1 tsp
  • Salt – To taste

Instructions

For Dressing:

  • In a blender, add the grated paneer, milk, and curd. Blend it to a smooth paste. 
  • Transfer it to a bowl and add paprika powder and salt. 
  • Refrigerate for at least 30 minutes. 

 

For Salad: 

  • Thinly slice the cucumber and onion. Chop the parsley and mint. 
  • In a large bowl, add the cucumber slices, red onion and herbs. 
  • Pour the dressing over the salad and toss gently to coat everything evenly. 
  • Let the salad sit for 5-10 minutes to allow the flavours to blend. 
  • Garnish with sesame seeds and a pinch of red pepper flakes. 
  • Serve immediately or chill for an hour for enhanced flavour.

  • You make different salad dressings as per your taste preference. 
  • Use English cucumbers for fewer seeds and extra crunch. 
  • You can also add feta cheese, chickpeas or tofu for more protein. 
  • Ensure cucumbers are evenly sliced for the best texture. 
  • Sprinkle it with salt and let it sit for 5 minutes, then drain excess water for a crispier salad.
